The Cajun Keto Chef's Picadillo

ground meat, preferably 80/20

cauliflower rice (traditional rice for non keto)

onion, chopped

1/4cup
green olives stuffed with pimento, chopped

red pepper, chopped

ground cumin

1cup
beef broth or water

1/4tsp
oregano, dried

cloves garlic, minced

olive oil

1tbsp
butter

1/4cup
white wine

bay leaf

Cajun 180 Mojo Seasoning

1/8tsp
ground cinnamon

1/4cup
tomatoes, chopped

3tbsp
2 Sisters' Salsa

salt & pepper, to taste

Instructions
Brown the ground meat. Drain and set aside.
In olive oil, saute onion, red pepper, seasoning, salt and pepper for a couple of minutes.
Add garlic and cook for another 30 seconds or so.
Deglaze the pan with the wine, scraping the brown bits of flavor.
Add the spices, olives, chopped tomatoes, salsa, bay leaf and beef broth.
Add the meat and cook for 20 minutes.
Remove bay leaf and add butter.
Serve over rice.
