The Cajun Keto Chef's Picadillo
Ingredients
  • 1lb ground meat, preferably 80/20
  • 2-4cups cauliflower rice (traditional rice for non keto)
  • 1/4cup onion, chopped
  • 1/4cup green olives stuffed with pimento, chopped
  • 1/4cup red pepper, chopped
  • 1tsp ground cumin
  • 1cup beef broth or water
  • 1/4tsp oregano, dried
  • 2 cloves garlic, minced
  • 1tbsp olive oil
  • 1tbsp butter
  • 1/4cup white wine
  • 1 bay leaf
  • 1tbsp Cajun 180 Mojo Seasoning
  • 1/8tsp ground cinnamon
  • 1/4cup tomatoes, chopped
  • 3tbsp 2 Sisters' Salsa
  • salt & pepper, to taste
Instructions
  1. Brown the ground meat. Drain and set aside. In olive oil, saute onion, red pepper, seasoning, salt and pepper for a couple of minutes. Add garlic and cook for another 30 seconds or so. Deglaze the pan with the wine, scraping the brown bits of flavor. Add the spices, olives, chopped tomatoes, salsa, bay leaf and beef broth. Add the meat and cook for 20 minutes. Remove bay leaf and add butter. Serve over rice.
