Ingredients
- 1 lb ground meat, preferably 80/20
- 2-4 cups cauliflower rice (traditional rice for non keto)
- 1/4 cup onion, chopped
- 1/4 cup green olives stuffed with pimento, chopped
- 1/4 cup red pepper, chopped
- 1 tsp ground cumin
- 1 cup beef broth or water
- 1/4 tsp oregano, dried
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1/4 cup white wine
- 1 bay leaf
- 1 tbsp Cajun 180 Mojo Seasoning
- 1/8 tsp ground cinnamon
- 1/4 cup tomatoes, chopped
- 3 tbsp 2 Sisters' Salsa
- salt & pepper, to taste
Instructions
- Brown the ground meat. Drain and set aside. In olive oil, saute onion, red pepper, seasoning, salt and pepper for a couple of minutes. Add garlic and cook for another 30 seconds or so. Deglaze the pan with the wine, scraping the brown bits of flavor. Add the spices, olives, chopped tomatoes, salsa, bay leaf and beef broth. Add the meat and cook for 20 minutes. Remove bay leaf and add butter. Serve over rice.
