Char the peppers over fire.
Place in Ziploc bag and let it sweat.
Peel off the skin and deseed the pepper.
Stuff the pepper with the 2 cheeses.
Dip it in beaten egg.
Fry at 350 degrees until golden brown.
Top with salsa and/or enchilada sauce.
