Instructions
1. Beat eggs and season to taste. Set aside.
2. Melt 1/4 stick butter in small, non-stick skillet.
3. Pour 1/4 of the beaten eggs in the skillet and cook on medium heat until firm on the bottom.
4. Sprinkle 1/4 of the cheese and 1/4 of the boudin on top.
5. Fold one side of the eggs over the other and flip the omelet over to finish cooking the eggs.
6. Plate and garnish with 2 tbsp. of salsa.
7. Personalize by adding your favorite ingredients.
