Ingredients
- 6 eggs
- 1/4 stick butter
- 1 link boudin, cooked without casing
- 1 cup mixed, shredded cheese
- 2 tbsp. 2 Sisters' Salsa of your choice
- 2 Sisters' Special Blend Seasoning, to taste
- salt & pepper, to taste
Instructions
- 1. Beat eggs and season to taste. Set aside.
- 2. Melt 1/4 stick butter in small, non-stick skillet.
- 3. Pour 1/4 of the beaten eggs in the skillet and cook on medium heat until firm on the bottom.
- 4. Sprinkle 1/4 of the cheese and 1/4 of the boudin on top.
- 5. Fold one side of the eggs over the other and flip the omelet over to finish cooking the eggs.
- 6. Plate and garnish with 2 tbsp. of salsa.
- 7. Personalize by adding your favorite ingredients.
