Ingredients
- 2 cups shredded chicken
- 1 jar 2 Sisters' Salsa (Original or Verde)
- 3 oz cream cheese, softened
- 1 tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp onion powder
- 1 tbsp minced garlic
- 3 tbsp cilantro
- 1 package shredded pepper jack cheese
- 1 package tortillas
Instructions
- 1. Preheat oven to 425°F.
- 2. Combine shredded chicken, 1/4 cup of salsa, cream cheese, lime juice, cumin, chili powder, onion powder, minced garlic, cilantro, and 1 cup of shredded cheese into a large bowl.
- 3. Put desired amount of mixture into each tortillas, and roll each up.
- 4. Place enchiladas into a glass baking dish. Pour remaining salsa on top of the enchiladas. Sprinkle extra cheese on top.
- 5. Bake for 25-30 minutes or until golden brown.
- 6. Optional: drizzle white queso on top.
